I found the two following sites but having never had a garage That's all I can do. Hopefully others have personal experience and can make recommendations.

I'd recommend an aluminium roller door. That way you can use the roof of the garage for lighting (and storage if there is space). We had one from H├Ârmann fitted (by a local installer) a few years ago, and never regretted it. No maintenance required.

We have a roller shutter type door on our garage which is activated by a fob key. This is a block of flats so the garage is communal, and unfortunately the electronics break down sometimes. There is a pulley system to roll it up manually but some clever person located this so high up it needs someone fit enough to climb onto a wall to operate it (and I am not that fit person). So two things - make sure it is checked regularly so the electronics are maintained - and make sure the manual over-ride is accessible.

Thanks all, very useful thoughts and info.

We had planned an insualted aluminium roller door, but then the builder said he's had one put in and it still let cold air through, plus the slightest knock put a dent in it, which concerned us, as things blow about on our windy ridge.

I would prefer a sectional door, as we took out of the original garage end of the single storey bit to do the conversion, but it would take up too much roof space that Mr BW needs for storage.

Looking at the H├Ârmann site I noted they do side sliding sectional doors, which may now solve all our problems!

Our Cordula garage door was wrecked by burglars. It had worked well for 10 years. We decided to use them again rather than the company the insurers wanted us to use (they were cheaper and could come sooner). More than one type.
